Home-made pasta with freshly grated Parmigiano-Reggiano.

Not really going to say too much about Parmigiano-Reggiano, except for the fact that I highly recommend that you buy it in it's brick form. Do NOT buy it already grated up...that's a big no-no! There's many reasons as to why you should buy it in it's brick form. For one, the cheese will last a lot longer. Tip: Wrap the brick up in saran wrap and put it in a Zip-Loc bag for storage in the fridge...but be sure to squeeze out all the air. If you see any molds growing, you do not need to throw the whole brick away...simply grate the molds off and you can continue to use the rest. Another reason is that it simply tastes better when you freshly grate it.
